Do we perceive beauty? I think that we perceive beauty by our preferences. If we aren't into art of any kind, even if it is beautiful we might not see it.
Do we stop to appreciate it? I think it depends on the situation and place. If you aren't interested or you got something you need to do, you can't appreciate it.
Do we recognize the talent in an unexpected context? I don't think so. The reason I think this is you aren't able to appreciate something if it isn't expected or wanted.
If we do not have a moment to stop and listen to one of the best musicians in the world playing the best music ever written, how many other things are we missing? We could be missing out on things that might be important or striking. We miss out on stuff because we have other things on life that come in the way.
